Cheese Straws

Ingredients:

    115g/4oz plain flour + extra for dusting

    5ml/1tsp mustard powder

    pinch of salt

    115g/4oz butter or margarine

    75g/3oz grated cheddar cheese

    pinch of cayenne pepper

    2tbs water

    1 egg beaten

    poppy, sunflower or sesame seeds to decorate (optional)

Method:

    sift the flour salt and mustard powder into a bowl and rub in the butter until the mix resembles fine bread crumbs.

    Stir in the cheese and cayenne pepper and sprinkle on the water. Stir in most of the egg, but leave a little for glazing. mix to a firm dough and kneed gently until smooth.

    Roll out the mix and cut into straws about 10cm long / half a cm wide. Glaze with the remaining egg.

    Place on greased baking sheets in a pre heated oven at 200c/400f/gas 6 for 8 to 10 minutes until golden coloured.
